I hear people using hwyl, sbort and sbri. Can anyone tell which context to use them all? As they seem pretty interchangeable for ‘fun’.

They are pretty much interchangeable, as far as the core meaning “fun” is concerned. The word sbri can also mean “spree” and “binge”, and sbort can also mean “mockery”, in the sense of the fun you make at the expense of someone else.
I understand that Hwyl originally meant the sail of a ship. So its many meanings (too many to mention here) are mainly related to having a wind in a sail.
